Mmmm - these Low Fodmap Courgette (Zucchini) crisps are yummy and healthy... A delicious savoury snack but with a hint of sweetness too.
Top Tip: Keep an eye on these during cooking as I found that some batches cooked quicker than others and I only just managed to catch some before they burnt.
Recipe Method.
Slice a large courgette (with a mandarin if you have one) and put the slices in a bowl with a couple of teaspoons of olive oil, 1/2 teaspoon of paprika and season. Mix them together and then put the slices on a baking tray. Cook in the oven for approx 30 mins at 200 degrees fan. I found they were much nicer when eaten warm (well that's my excuse anyway haha).
