I'd not actually heard of Gremolata until recently. If anyone else hadn't either, it's a mix of parsley, lemon zest and garlic. Their fresh, bright and zingy flavours add an extra dimension to the dish.
Garlic is generally a no, no for the Low Fodmap diet so in this recipe, I have just added one whole clove during cooking for the taste and then fished it out before serving :-)!
Adapted from Nigel Slater's "This Little Book of Fast Food", this recipe is an excellent way to liven up the humble, Low Fodmap friendly Courgette.
Top tip for you - Watch the breadcrumbs as they burn easily!
Low Fodmap Courgette Gremolata
Ingredients
- 6 slices Bacon (chopped into pieces)
- 1 x sprig Rosemary (chopped)
- 1 clove Garlic
- Two good handfuls gluten free Breadcrumbs
- 1 tbspn Parsley (chopped)
- finely grated Lemon (small)
- Salt and Pepper (to season)
- 4 (sliced thickly) large Courgettes
Instructions
1. Fry the Bacon until golden and crisp, then add the rosemary and garlic. Cook for 2 mins then add the breadcrumbs and stir.2. Cook the breadcrumbs until golden (watch the pan all the time to make sure they don't burn) then add the chopped parsley and lemon rind. Season.3. Remove the mixture from the pan and put it on a plate.4. Wipe the pan clean and then fry the Courgettes in a little oil (not too much as it can make them a little sickly) until they are just cooked.5. Take out the garlic clove and put the crumb mixture in the pan with the courgettes, heat gently and then serve.
