This low fodmap Chocolate Mousse is utterly gorgeous. It has the bonus of being very simple and easy to make consisting of just two ingredients.

Low Fodmap Chocolate Mousse
Ingredients
- 110g Good quality Dark Chocolate
- 4 Eggs (1 for each person)
Instructions
1. Separate the eggs so that the yolks are in one bowl and the whites are in another. Beat the egg yolks.2. Break up the chocolate and melt in the microwave3. When the chocolate has melted and whilst it is still hot add the beaten egg yolks and stir. (This will cook them).4. Leave to cool for 15 minutes5. Whisk the egg whites until white and soft peak stage. (Don't overdo it)6. Fold this into the cooled chocolate.7. Divide mixture into ramekin dishes or wine glasses and cool for 2 hours or more. Serve with whipped lactose free cream and a few sprinkle of nuts!
