Low Fodmap and Sugar Free Banana Bread

I'd heard about a sugar free banana loaf before but dismissed it as being too healthy - however last week I found I'd too many bananas and not much sugar in the cupboard so I decided to give it a go..and I'm glad I did. 





Try to use overripe bananas for that extra sweetness.

It is easier to slice cakes/bread when they are cold, but having said that I could not wait on this occasion and cut a piece whilst still hot from the oven and ate it straight away. Yum!

Gluten Free and Sugar Free Banana Bread
Ingredients
  • 300g Rice flour (the finest you can get your hands on)
  • 4 Bananas
  • 3 Baking powder (gluten free)
  • 300ml Milk (lactose free)
  • 100g Butter
  • 2 Eggs
Instructions
1. Line the base of the Loaf tin with greaseproof paper.2. Chop up the bananas and put them in a mixer bowl.3. Add all the other ingredients and mix together until smooth.4. Tip the mixture into the loaf tin.5. Bake in the oven for 45 minutes at 180 degrees (or 160 degrees fan).6. Carry out the skewer test to see if it is baked through. If the top of the loaf is golden brown and the skewer is clean, it should be ready.
