Low Fodmap Aubergine and Feta with Sweet Chilli Sauce

Blue ingredients containing anthocyanins have been linked to improving balance, co-ordination and short-term memory in old age, as well as better vision! I know, I know - truly great health heroes! Here's a great recipe to get us started! 









I can handle sweet chilli sauce but if this affects you, just omit it. It really is as tasty without it too! I promise you will not be disappointed!

I'm really looking forward to making some more recipes with those blue ingredients if they are as delicious as that one! We will be super healthy come our golden age!

Low Fodmap Aubergine and Feta
Ingredients
  • 2 Aubergines
  • Few slices Feta
  • 4 teaspoons Sweet Chilli Sauce
Instructions
1. Turn on the oven to 180 degrees2. Cut the aubergines in half lengthways. 3. Make a pocket in the aubergine halves by slicing down lengthways between the two outer edges (don't slice all the way through) 4. Slice some feta cheese and stuff it gently into the pocket so that it fills it nicely without breaking through the skin of the aubergine5. Add a teaspoon of chilli sauce into each pocket.6. Fry in frying pan until golden brown (a few minutes on each side) 7. Put in oven for 10-15 minutes until cooked all the way through.8. Serve with a green salad.
