Bacon and Courgette Quiche (without pastry)
Ingredients
- 8-10 Bacon slices
- 2 Courgettes (large)
- 180g Cheddar (grated)
- 2 tablespoons Olive oil
- 6 Eggs (lightly beaten)
- sprinkle Salt and freshly ground pepper
Instructions
1. Turn on the oven at a temperature of 180 degrees
2. Grease a large quiche dish3. Cut the bacon slices into bite size pieces and fry them for around 10 minutes. Put on paper towels to drain off any excess fat and cool.4. Mix the courgette, cheese, oil, eggs and bacon in a bowl and season with pepper and salt (take it easy on the salt as the bacon is already quite salty).5. Put into the quiche dish and pop it into the oven for about 30-35 minutes - until firm and lightly golden.6. Take out of the oven and stand for 5-10 minutes (if you can!) before cutting into it and serving.
