Low Fodmap Potato and Parsnip Soup

I know, I know another soup recipe! But when there's still a chill in the air I love cosying up in my warm kitchen with a tasty, comforting bowl of soup. 

This Low Fodmap Potato and Parsnip Soup garnished with chopped chives is creamy without being too rich and has become a firm favourite.

Low Fodmap Potato and Parsnip Soup
Ingredients
  • 1tbspn Olive Oil
  • 1 stalk Celery (chopped)
  • 5 Parsnips (chopped)
  • 2 Potatoes (chopped)
  • 1 Chicken stock
  • 125ml milk Semi-skimmed (lactose free)
  • 80g Feta (crumbled)
  • 2tbspn Chives (chopped)
Instructions
1. Heat the oil in a saucepan, add the celery and cook until golden brown (about 4 minutes)2. Add the potatoes and parsnips and cook for 2 mins stirring occasionally3. Add the stock, cover and cook for 15-20 mins.4. Liquidise in a blender5. Pour back into saucepan and add milk and feta and stir. Season and serve with the chopped chives.
