Low Fodmap Snack of Roasted Pecan Nuts and Rosemary


This is a quick, delicious, healthy, low-fodmap snack of Roasted Pecan Nuts and Rosemary.






Ingredients:

1 mug full of pecans
1/2 a tablespoon of olive oil
1/2 tablespoon of Rosemary (chopped finely)
1/2 teaspoon sprinkle of ground rock salt (or to taste)



Method

1. Put the oven on 150 degrees fan,
2. Cover a flat baking tin with greaseproof baking paper
3. Mix all the above ingredients into a bowl
4. Tip them onto the flat baking tin and spread them out into one layer.
5. Cook for 15 minutes




I love this Low Fodmap snack as it is so quick to make and you can just knock up a bowlful in 20 mins.

I find they are especially tasty when warm and you will find it hard to resist eating them all when they come straight out of the oven. 

My fave time to eat these is in the evening whilst watching a good film with the family but they are also a yummy snack to have at any time of the day!

The pecan nuts are crunchy, savoury and will keep well for a couple of days in an airtight container.
