Low Fodmap Roast Vegetables and Sausages.

This Sausage and Roast Vegetable dish has just become another favourite of mine. Also it is low fodmap and gluten free!








It had been a warm, rainy day yesterday and I was not too keen on having another salad but didn't want anything too heavy for dinner either. This dish seemed to be the perfect compromise. The exploding flavours coming from the sausages, herbs and vegetables will have you smiling, I promise!

Note: Buy some good quality, gluten free sausages that are not too fatty.

Low Fodmap Roast Vegetables and Sausages
Ingredients
  • 8 Gluten free Sausages
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 Courgette
  • 1 Aubergine
  • 6 Tomatoes medium size
  • 6 Tomatoes Baby
  • Large bunch Thyme
  • Salt and Pepper (to season)
  • 6 tablespoons Olive Oil
Instructions
1. Fry the sausages for 5 minutes until lightly brown all over2. Chop the peppers into quarters and the courgettes and aubergine into large chunks3. Half the medium tomatoes and chop up the fresh thyme4. Put the sausages, peppers, courgettes, tomatoes in a roasting and pour over 6 tablespoons of olive oil, sprinkle over the thyme and season with salt and pepper.5. Put in a hot over at 180 degrees celsius for 35-45 minutes until the vegetables are soft and cooked.
