Low Fodmap Raspberry and Strawberry Crumble

Raspberries and Strawberries are Low Fodmap friends and as there's a nip in the air today, I thought I'd make a nice warm and comforting crumble with them. What's more my non-low fodmap friends and family love it!





Fruit mix
250g strawberries hulled and halved
225g raspberries
1 orange
a couple of drops of vanilla essence
a few teaspoons of sugar
1 tsp cornflour

Crumble
50g sugar
70g gluten free plain flour (I use Doves)
80g ground almonds
70g butter/marg

Halve and hull the strawberries and mix with the raspberries.




Grate the zest of one orange.


Put the grated zest into the bowl with the raspberries and strawberries.


Add a squeeze of orange juice (I just used the juice of one half) to the mixture.


Add 3-4 tsps of sugar and 1 tsp of cornflour to the fruit.



Stir and put in small overproof bowls or one medium sized dish.

Make the crumble by putting sugar, flour, butter and ground almonds together in a bowl and then use your fingers to rub in the butter until you get large crumbs.

Sprinkle the crumble over the fruit mix and bake for 30 mins until golden brown.


Serve with some lactose free vanilla ice-cream and you have a very special dish.
